Navratri Special Halwa Using P Mark Sooji
Sooji Halwa is an authentic Indian semolina and sugar syrup dessert made on the eighth (Ashtami) or ninth (Navmi) day of Navratri as a Prashad for Maa Durga and is served along with Puri-Chana to Kanjaks (little girls who are considered goddesses as per Hindu Mythology).
Here’s an easy Suji Halwa recipe for you guys to enjoy this delicacy at home.

Ingredients:
P Mark Sooji(Semolina): 1 Cup
Sugar: 1 Cup (or as per taste)
Water: 4 Cups
Ghee (Clarified Butter): 1/2 Cup
Powdered Green Cardamom: 1/4 Tsp
Raisins: 1Tbsp
Blanched and Shredded Almonds: 1 Tbsp
Method
Step 1
In a deep, heavy based sauce pan, melt the ghee add the PMark sooji and stir fry over medium/low heat, depending on how often you stir it.
Step 2
At the same time in another pan dissolve the sugar in the water over low heat and let it simmer, till required.
Step 3
Tip- It is convenient to do this in a pan with a long handle because when you pour the sugar solution into the Sooji mixture a lot of steam is created, which burns your hand.
Step 4
When the sooji is light brown and gets a glossy look and does not stick together much (which means it is fried enough) add the sugar solution and the cardamom and bring to a boil, then simmer till the liquid is absorbed. Now add raisins soaked in water.
Step 5
Serve hot, garnished with the almonds.
