Tempting Eggless Fruit Cake Made Using P Mark Maida
Try this easy eggless cake recipe and enjoy delicious, moist and soft fruit cake at home. You can make this fruit cake by using P Mark refined flour. Enjoy!

Ingredients:
- 340g P Mark Maida/ plain flour
- 1/2 teaspoon salt
- 1 teaspoon mixed spice
- 180gms butter
- 180g caster sugar
- 340g sultanas or tutti frutti mix
- 150ml milk
- 150ml water
- 1 tablespoon vinegar
- 1 level teaspoon bicarbonate of soda
- 60g crunchy nut topping or chopped hazelnuts (optional)
- 7 and a half inch cake tin, base lined and greased
Method
Step 1
Preheat the oven to 180°C for 25 minutes.
Step 2
Sift the P Mark Maida or flour, salt and mixed spice into a large mixing bowl. Rub in the butter and then add in the sugar and sultanas.
Step 3
In another bowl, mix the milk, water vinegar and bicarbonate of soda together. Now stir this mixture into the flour and mix thoroughly with a wooden spoon.
Step 4
Grease a 20cm (8 in) cake tin and add the cake batter. If you want, you can sprinkle over the nut topping.
Step 5
Bake @ 180°C in the centre of the oven for about 1 hour and 45 minutes. Put in a skewer in the middle of the cake, if it comes out clean then the cake is done. Cool it in the tin, before taking it out.
