Sooji
Sooji, Rava (sometimes spelled Rawa), and Semolina are different names of the flour that is obtained from wheat. The coarse particles produced by milling wheat are Sooji. Sooji is the resultant when wheat is granulated but not crushed fully into powder form.
The milling process is very thorough & hygienic. Bran and endosperm are compressed and sheared between smooth rolls through which the particles are flattened and expanded, making separation of the components easier through sieving. Later grinding passages are conducted on sizing rolls that reduce large endosperm particles to a uniformly smaller size.
